Coconut slice with orange syrup
This recipe was originally a coconut slice with lemon syrup which I think would be delish but I only had an orange so substituted lemon for orange. I'm going to make it again as it was very nice but may even try it with lime. I loooove lime.
Coconut slice with orange syrup
155g soft butter
3/4 cup caster sugar
2 teaspoons grated orange rind
2 eggs
1 1/4 cups desiccated coconut
1 cup self raising flour
2 tablespoons orange juice
orange syrup
1/4 cup caster sugar
1 tablespoon grated orange rind
1/3 cup orange juice
1/4 cup water
Preheat oven to 180C, beat butter, sugar and rind in bowl until light and fluffy, beat in eggs until combined. Stir in coconut, flour and juice. Spread mixture into greased pan 20cm by 30cm and bake for approx 20 mins (took me closer to 30). While cake is cooking make syrup by placing ingredients in saucepan and cooking over low heat until sugar melts then simmering for 10 mins or until syrup thickens slightly. Pour syrup over hot slice, cool in pan before cutting.

Looks DELISH! And lethal....
Ha! I did something similar the other day - it was a cake with lime syrup, which I had substituted because I didn't have lemons! I can tell you it was a fab flavour combo but I wasn't happy with the cake - very stodgy. I will try your recipe next time!
